Zest 2 lemons with a microplane grater to get 1 tbsp of lemon zest.

Juice 5-6 lemons to get 1 cup of lemon juice. Dissolve 1 cup of sugar into 1 cup of water over medium heat.

Simmer the juice over medium heat to infuse the lemon flavor into the syrup. Add the zest and allow it to steep for up to an hour.

Strain the lemon syrup through a fine mesh sieve before bottling to remove the zest.
