Easy 4-Ingredient Baked Boursin Dip

This easy baked Boursin dip recipe is a creamy, cheesy baked dip made with roasted tomatoes, shallots, garlic, and Boursin cheese. Perfect for serving with crackers, crostini, or crusty bread as an easy appetizer.

Equipment

  • 1 oven safe baking dish
  • 1 knife
  • 1 cutting board

Ingredients
  

  • 305 g tomatoes 2 cups, or 1 whole pint container, such as cherry or grape
  • 150 g Boursin cheese Garlic + Fine Herb flavor recommended, one whole 5.3 ounce block
  • 20 g shallot 1/2 small shallot, sliced thin, about 2 TBSP chopped
  • 8 g garlic 2 cloves, chopped
  • 12 g olive oil 1 TBSP
  • 2 g salt 1/2 tsp
  • pepper 1/4 tsp, freshly ground
  • fresh basil optional, for garnish

Instructions
 

  • Preheat oven. Preheat your oven to 400°F (200°C).
  • Slice and combine tomatoes, shallots, and garlic. In an oven-safe baking dish, combine the tomatoes, shallot, and garlic. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

  • Roast. Roast in the preheated oven for 20-25 minutes, until the tomatoes are softened and starting to burst.
  • Add cheese. Remove the dish from the oven and place the Boursin cheese in the center of the roasted tomatoes.

  • Bake. Return the dish to the oven and bake for an additional 5-10 minutes, until the cheese is just starting to melt down.
  • Stir to combine. Remove from the oven and give everything a gentle stir to combine the melted cheese with the roasted tomatoes.
  • Garnish + serve. Garnish with fresh basil, if desired. Serve immediately with crackers, crostini, or crusty bread.

  • bread spread - pair with quick crostini crackers or a crusty fresh baked baguette for the ultimate starter!
  • chip dip - serve alongside tortilla chips, potato chips, corn chips, or pita chips for a game-day appetizer!
  • veggie slices - chop up some carrot sticks, celery, and red peppers for a quick crudités platter!
  • pasta sauce - this dip also makes an excellent pasta sauce! Boil your favorite pasta shape (I recommend cavatappi or rotini) and toss the al-dente drained noodles in this dip for a luxurious sauce!
  • on pizzas - this dip also works wonderfully as a pizza sauce on homemade crust! Use it on mini pizzas for a fun appetizer with incredible cheesy flavor!

ℹ️ troubleshooting tips

  • too watery - if your tomatoes release too much moisture and make your dip a bit “soupy” you can bake it for another 10-15 minutes to allow some of the excess moisture to cook off. You can also allow the dip to cool slightly before serving, which will help it firm up a bit.
  • tomatoes not bursting - make sure to slice your tomatoes into quarters, even though they are small in size. This helps them cook faster. If they aren’t breaking down and bursting, you can smash them with a spatula or fork to help the process along.
  • cheese not melting - if your Boursin isn’t melting after 8-10 minutes, you can allow it to bake for up to 15 minutes. Additionally, be sure to let your cheese come to room temperature as you prep the other ingredients so it bakes faster.
  • dip separating - if your dip begins to separate, just give it a gentle stir before serving.
