Equipment

  • 1 highball drinking glass
  • 1 muddler

Ingredients

  • 2 ounces pineapple simple syrup
  • 3 pieces pineapple cut into 1-inch chunks
  • 8 ounces soda water plain, unflavored
  • ice to fill glass
  • 2 pineapple leaves for garnish

Instructions

  • Add fruit. Place 2-3 fresh pineapple chunks in a glass.
  • Add syrup. Pour in 1 - 2 ounces of pineapple simple syrup.
  • Muddle. Muddle the syrup with the pineapple pieces, making sure to blend them well.
  • Add ice. Fill the glass with ice.
  • Top with bubbles. Pour in 6 - 8 ounces of plain sparkling water or soda water.
  • Stir. Give the glass a good stir to distribute the pineapple chunks and syrup.
  • Garnish. Garnish with a couple pineapple leaves and pieces of pineapple.
  • Serve. Serve with a straw. Best enjoyed immediately after making to preserve the bubbles!

Notes

Ratio of soda water to syrup:
I find I like the ratio to be 8:1 ounces, soda water to syrup, but you can increase the syrup to 2 ounces to add more flavor!
