Add fruit. Place 2-3 fresh pineapple chunks in a glass.
Add syrup. Pour in 1 - 2 ounces of pineapple simple syrup.
Muddle. Muddle the syrup with the pineapple pieces, making sure to blend them well.
Add ice. Fill the glass with ice.
Top with bubbles. Pour in 6 - 8 ounces of plain sparkling water or soda water.
Stir. Give the glass a good stir to distribute the pineapple chunks and syrup.
Garnish. Garnish with a couple pineapple leaves and pieces of pineapple.
Serve. Serve with a straw. Best enjoyed immediately after making to preserve the bubbles!
Notes
Ratio of soda water to syrup:I find I like the ratio to be 8:1 ounces, soda water to syrup, but you can increase the syrup to 2 ounces to add more flavor!
