This Peeps simple syrup recipe is a fun way to incorporate the classic marshmallow candy into any beverage you can imagine! It’s made using Peeps candy, sugar, and water, and trust me— you need all three! This syrup is the perfect way to make peeps-inspired cocktails like a peep martini, or a peeps daiquiri, and even mocktails like a peeps soda pop that’s fun for the whole family!

Instructions
Heat water + add sugar. Heat water over medium low heat. Add sugar and stir until it dissolves.
237 g water, 100 g sugar
Add peeps. Add peeps and allow them to slowly melt. Do not turn the heat up too high, you don’t want the mix to boil, so keep it at a medium-low heat.

Cool + strain. Once the peeps melt, allow the mix to cool. Strain the syrup to remove any unmelted pieces of peep.
Bottle + store. Pour your finished syrup into an airtight storage bottle. Keep your syrup in the fridge for up to 2 weeks. Use it in all your favorite drinks, from soda to coffee!

ℹ️ Troubleshooting tips
jelly syrup - if your syrup turned into jelly in the fridge, you can allow it to come to room temperature to liquify again, or pop it in a measuring glass filled with hot water to rapidly come to temperature.
not enough marshmallow flavor - if you want MORE marshmallow taste without adding in more peeps, you can use a special extract to boost the flavor. LorAnn makes a marshmallow extract that’s available online (affiliate link)!
🔆 top tip
Marshmallows are tricky because they contain gelatin, which, well…gels up when it’s cold. So, you need to make sure your proportions of sugar to gelatin are just right in order to stay a liquid, even when chilled.
