Pizza Burrata Dip with Roasted Cherry Tomatoes

Equipment

  • 1 baking dish or small casserole dish
  • 1 spatula or spoon
  • 1 knife
  • 1 cutting board

Ingredients
  

  • 12 g olive oil light drizzle
  • 300 g cherry tomatoes 2 cups or 1 pint
  • 6 g garlic cloves chopped 2 cloves
  • dried oregano small pinch
  • 2 g kosher salt 1/2 tsp
  • ground black pepper 1/4 tsp
  • red pepper flakes small pinch
  • tomato paste 2 TBSP
  • 10 ounces burrata mozzarella 3-5 balls of burrata, depending on size

Instructions
 

  • Preheat your oven to 400º F
  • Wash and dry 300 g of cherry tomatoes, about 2 cups.

  • Drizzle tomatoes in oil and toss with garlic, seasoning and spices.
    12 g olive oil, 6 g garlic cloves, dried oregano, 2 g kosher salt, ground black pepper, red pepper flakes
  • Roast at 400ºF for 20 minutes. The tomatoes should be bursting and the pan should be filled with a bit of liquid.
  • Carefully stir in tomato paste to create a thick sauce-like texture. You want it to be pretty thick because the burrata will add a lot of moisture.

  • Gently nestle the burrata into the baking dish, spacing them out a few inches so they melt evenly.

  • Return to the oven for another 10-15 minutes, until the burrata is melty and starting to brown on top.
  • Garnish with fresh basil leaves, if desired, and serve immediately with crackers, bread, or crostini.
