Pizza is transformed into an appetizer-style dip in this easy pizza burrata dip recipe! It’s a bold, flavorful, and indulgent dish that’s perfect for sharing. It’s made with fresh burrata mozzarella, roasted cherry tomatoes, and a bit of tomato paste for extra richness, making it the ultimate appetizer!

why this oven baked burrata pizza dip works:

🍅 tomato paste + fresh tomatoes. Cherry tomatoes release a lot of liquid when they roast, and burrata also has a lot of liquid. The tomato paste helps to act as a binder and thickener, turning everything into a lush saucy dip!

🙌 easy appetizer. You can make this dip in the oven or countertop oven while you are prepping other elements of dinner.

🍝 multipurpose. While this recipe was originally developed as a dip, it also works wonderfully served alongside a large bowl of fresh pasta! Scoop the sauce and cheese up to top your favorite pasta, from spaghetti to orzo!

  • burrata mozzarella – cool and creamy burrata cheese is rich and milky in taste. It’s a ball of fresh mozzarella that encases a cream filled center of stracciatella, or mozzarella curds. Be sure to set your mozzarella out as you prep the other ingredients to allow it to get to room temperature. This will help it melt more evenly as it bakes.
  • cherry tomatoes – these perfect snacking tomatoes add sweetness and a pop of vibrant flavor. When roasted, they get even sweeter, which helps to balance the other flavors in this dip.
  • tomato paste – the tomato paste acts as a thickener for the dip, helping to incorporate the extra moisture that burrata and roasted cherry tomatoes bring.
  • garlic – fresh garlic cloves roast with the cherry tomatoes, creating an almost sweet garlicky taste.
  • dried oregano – since the sauce will be baking, dried herbs work better than fresh. Oregano adds some earthy intrigue to the sauce, it’s a classic Italian spice! Dried herbs work perfectly because they’ll be baking with the sauce.
  • dried parsley – similar to the dried oregano, dried parsley adds some depth to the dip as it bakes.
  • salt & pepper – no dish is complete without a bit of seasoning from kosher salt and freshly ground black pepper!
  • red pepper flakes – always optional, but I love adding a pinch of red pepper to give a bit of spice to tomato dishes.
  • fresh basil – we’ll use some sprigs of fresh basil to top the sauce with, as a garnish. You can also chop up some fresh basil to sprinkle over top of the dip right before serving. The fresh basil leaves also add a nice pop of color against the red sauce and white cheese.

1: Lightly drizzle your tomatoes in olive oil and toss with garlic and spices.

2: Bake them in the oven until they break down a bit, and get nice and roasted.

3: Add in the tomato paste, taking care to really stir things around.

Fresh burrata is nestled into baked tomatoes and tomato paste, and is being put back into the oven.

4: Gently nestle in the burrata into the tomato sauce mix, spacing each ball of burrata about 1-2 inches apart so the cheese melts evenly.

5: Place the baking dish back into the oven for another 15 minutes, or until the cheese is melty and browning on top.

6: Garnish with some fresh sprigs of basil and serve your dip immediately!

Hint: Depending on the consistency of the tomato paste you use, you might need to add a bit more to get the right texture. You’ll want it to be a bit thick since the burrata will add a lot of moisture.

ℹ️ troubleshooting tips

  • too thin – there is a lot of moisture in this dish from the tomatoes and burrata, so you might find that you need to add a bit more tomato paste to thicken things up. Also be careful not to use more than a few tablespoons of olive oil to keep the consistency right.
  • tricky to eat – the fresh mozzarella in this recipe is VERY stretchy, and it can sometimes be hard to scoop up. Serve this dip with a spreading knife to help your guests portion the mozzarella out, if needed.
  • not melty and golden brown – make sure you allow your cheese to get to room temperature before putting it in the baking dish. This allows it to melt more evenly. Also, make sure you are using a properly preheated oven.

Ingredients

  • 12 g olive oil light drizzle
  • 300 g cherry tomatoes 2 cups or 1 pint
  • 6 g garlic cloves chopped 2 cloves
  • dried oregano small pinch
  • 2 g kosher salt 1/2 tsp
  • ground black pepper 1/4 tsp
  • red pepper flakes small pinch
  • tomato paste 2 TBSP
  • 10 ounces burrata mozzarella 3-5 balls of burrata, depending on size

Instructions

  • Preheat your oven to 400º F
  • Wash and dry 300 g of cherry tomatoes, about 2 cups.
  • Drizzle tomatoes in oil and toss with garlic, seasoning and spices.
  • Roast at 400ºF for 20 minutes. The tomatoes should be bursting and the pan should be filled with a bit of liquid.
  • Carefully stir in tomato paste to create a thick sauce-like texture. You want it to be pretty thick because the burrata will add a lot of moisture.
  • Gently nestle the burrata into the baking dish, spacing them out a few inches so they melt evenly.
  • Return to the oven for another 10-15 minutes, until the burrata is melty and starting to brown on top.
  • Garnish with fresh basil leaves, if desired, and serve immediately with crackers, bread, or crostini.
