Most homemade chex mixes are lacking in flavor because they don’t have enough seasoning and the seasoning is not evenly distributed. Lots of folks also struggle with baking at the right temperature for the right amount of time, and risk ending up with burned mixes (which is NOT great for flavor…).

After years of obsessing over flavor distribution and understanding how flavor works, I’ve perfected my cheesy chex mix, and the educator in me can’t help but explain just WHY this works.

Because nothing is more disappointing than trying to recreate your store-bought favorites at home and having the recipe fall flat. 😔 Thankfully, you don’t have to worry about that, because I’ve done all the research and recipe testing for you!

🛒 ingredients needed for cheddar chex mix

  • blend of chex cereal – this recipe uses the trifecta of chex: corn, wheat, and rice. A blend gives you an interesting blend of crunch and flavor.
  • cheez-its, mini cheese cracker sandwiches, + bagel chips – is there such a thing as too much cheese? I don’t think so, which is how these cheesy crackers got added to this mix! Bagel chips are a must in chex mix in my opinion— they provide ample surface area for seasoning to stick to, becoming little flavor bombs!
  • nuts – I love using peanuts and almonds in this chex mix because it adds a bit of crunch and interest to the flavor (not to mention a mild amount of nutritional value…😂).
  • melted unsalted butter – unsalted butter matters here because a lot of the other ingredients are salted. Store-bought chex mix uses a combination of vegetable oils. Like a combo of soybean, palm, and other oils. That blend gives the bagged party mix layers of flavor, but you know what has a BETTER flavor? Butter. Butter = better.
  • cheese powder – I know it can be freaky to work with “space-age ingredients” like shelf-stable cheese powder, but you NEED to use the cheese powder. Shredded cheese will result in a oily, melty mess, susceptible to burning. It’s your choice on white cheddar or yellow, but I love the nostalgic color of the bright orange color that comes with yellow cheddar cheese powder.
  • worcestershire sauce – it is borderline impossible to pronounce, but this fermented, funky, and complex seasoning sauce adds in a layered oomph to the mix.
  • seasoning salt – I love using a salt-free “seasoning salt” blend because there is already a lot of salt in the other ingredients of this mix. I find that in order for the cheese to really be the star, you’ve gotta dial back a bit of salt elsewhere (that’s what The Balancing Act Flavor Factor is all about, btw 🤓).
  • mustard powder – adding mustard is a lil trick I learned from my homemade mac-n-cheese tests. The mustard adds a bit of tang and punch that acts as a “highlighter” for the cheese, adding a bit of zing to the cheesiness and helping to lighten it up, too (aka The Pop Flavor Factor in action 😉).
  • garlic + onion powder – both of these seasoning powders help to amp up the flavor of this mix! You can add as much or as little as you like, especially if you’re a garlic girl like me. 💅🏻

🧀 choosing a cheddar powder

A high quality cheese powder should really say it’s made of only cheddar cheese. It’ll have the other ingredients in [brackets like this, usually] or (in parenthesis, like this) but if there are a lot of other ingredients in a list style format…look for other options. 😅

Keep an eye on the sodium content too! The amount of sodium in cheese powders varies greatly, and if your powder has a lot of sodium, you will likely want to cut out the seasoning salt from this recipe.

1: Combine the cereal, crackers, bagel chips, and nuts, mixing well to combine.

3: Drizzle a small scoop of the marinade over the cereal mix, taking care to really stir everything well between batches.

4: Repeat this process 2-3 more times, until all of the marinade is stirred into the mix. This is the KEY to getting evenly coated chex mix!

5: Spread onto two baking sheets, and place in the oven.

💡tips & tricks for getting it right

ℹ️ troubleshooting tips

  • uneven flavor – the world might not be fair, but your party mix seasoning distribution should be. 😤 Drizzling the seasoning in batches gives each piece of cereal, each wittle snack cracker, each individual peanut and almond their own personal hug of cheesy seasoning.
  • burned – the orange color of this mix makes it a little tricky to notice when things are toasty vs. torched, and trust me, you do not want to stomach bitter burned chex mix. So do not bake it higher than 200ºF. Please please please get an oven thermometer if you do not have one! And once you know your oven on a personal level, rotate the pans and stir the contents of the mix while baking it.
  • too salty – make sure to pay attention to the sodium content of your cheese powder. They are not all created equal, and some are saltier than others. If your cheese powder has a lot of salt added, you can skip the seasoning salt. This is why I like to go the extra mile and make my own “seasoning salt” using only spices and skipping the salt!
  • soggy – mushy mix usually happens when you underbake it or go rogue and do something like double the butter.  Also, make sure you stir the batch every 15-20 minutes, so a total of 2 times, at least! This helps with even baking!
  • clumpy – oops, did you skip blending your cheese powder into the butter mix and get clumps? 🫣 The good news is that even if the mix is clumpy, it’ll still taste great. It’s just not the most visually appealing, but passes as #rustic.

⚖️ scaling tips

Fair warning: this recipe makes A LOT of chex mix. Like…25+ cups. I like to cut the recipe in half unless I am expecting guests, because I don’t like who I turn into when I’m surrounded by 25+ cups of cheese chex mix.

🔆 top tip

Whatever you do, DO NOT DUMP THE SEASONING SAUCE ON IN ONE GO. You MUST slowly disperse it in batches. Three minimum!

♻️ customize your cheese chex mix

If you suddenly realize you’re out of one of the ingredients, do not worry! This recipe is super flexible. You can also double any other ingredient to compensate for a missing one.

  • choose your chex – while I prefer the blend of flavors from multiple types of chex cereal, you can use a single type of cereal based on your flavor or dietary preferences!
  • swap in your favorites – if you like pretzels in your mix, you can use them here! It’s also really good with thick potato chips in place of bagel chips, and goldfish crackers in place of cheez-its! Heck, you can even make your own cheez-its!
  • nut-free – use sunflower seeds or pumpkin seeds in place of almonds and peanuts for a nut-free alternative. Make sure they are raw and unroasted to keep them from being burned!

🧰 equipment needed & storage tips

  • big mixing bowl – when I say big, I mean BIG. Mine is 8 quarts, or 32 cups. If you don’t have a large enough bowl to easily stir your ingredients, you can season them in bathes on the sheet pans.
  • immersion blender or whisk – blending the cheese powder into the butter sauce creates a uniform seasoning that evenly covers everything.
  • sheet pans – using two separate half-sheet pans means you have more room to stir and rotate your mix as it bakes. I also like to use a 3/4 sheet pan for extra insurance against steaming the mix.
  • parchment paper – lining your pans with parchment helps you easily shuffle your mix around while baking, and it also makes it really easy to pick up the parchment and slide the mix into a storage container once it’s cooled!

🫙 how to store homemade chex mix

This snack mix will keep fresh when stored in an airtight container for up to 2 weeks. But…mine has never lasted longer than about 7 days before being completely devoured. 😬

You can skip the nuts, but I think they add a nice boost of texture, flavor, and they have enough nutritional value that brings this snack mix into meal replacement territory. Just don’t tell any wellness bloggers I said that, please. 🫣

No! Well, if you REALLY want to, but be warned, it’s really easy to burn because of the high fat content of the butter + cheese mix. Plus, the orange color makes it tough to keep an eye on the color. I learned this the hard way while recipe testing 6+ batches, please learn from my mistakes. 😂

  • 100 g rice chex 3 cups
  • 100 g corn chex 3 cups
  • 140 g wheat chex 2 cups
  • 215 g mini cheese sandwich crackers 2 1/2 cups
  • 150 g cheez-Its 2 cups
  • 110 g bagel chips 2 cups, broken up
  • 160 g peanuts 1 cup
  • 165 g almonds 1 cup
  • 170 g melted unsalted butter 3/4 cu or 1-1/2 sticks
  • 45 g worcestershire sauce 3 TBSP
  • 10 g seasoned salt 1 TBSP
  • 4 g mustard powder 2 tsp
  • 6 g garlic powder 1.5 tsp
  • 4 g onion powder 1.5 tsp
  • 90 g cheddar cheese powder 3/4 cup

Instructions
 

  • Preheat oven. Preheat the oven to 200ºF.
  • Make the marinade. Combine the melted butter, seasonings, and cheese powder. Blend or whisk until smooth and uniform.
    170 g melted unsalted butter, 45 g worcestershire sauce, 10 g seasoned salt, 4 g mustard powder, 6 g garlic powder, 4 g onion powder, 90 g cheddar cheese powder
  • Mix dry ingredients. Pour all the dry snack mix ingredients into a bowl and toss well to combine.

  • Pour marinade in 3 -4 batches. Pour 1/4 – 1/3 of the marinade over the mix and toss very well. Repeat twice more (3-4 total batches) for even coating.
  • Bake + stir. Spread evenly on a sheet pan. Bake 40-45 minutes, stopping every 15–20 minutes to stir and redistribute.
  • Cool. Let cool completely on the sheet pan so it crisps up.
  • Serve + store. Store in an airtight container up to 2 weeks.
