These easy everything bagel cashews are a delicious dupe of both Aldi and Trader Joe’s everything bagel cashews, except you get to customize the flavor and the seasoning actually sticks to each cashew!

Because here’s the thing: most store-bought everything bagel cashews have a major flaw: the seasoning falls right off. You end up with a pile of sad, bare cashews at the bottom of the bag and all that delicious bagel seasoning cramming the crevices of the bag instead of coating your cashews. Not exactly ideal for snacking. 😩
The secret to keeping the seasoning stuck to every single cashew? Whipped egg whites. It’s a professional technique I learned in culinary school that creates a light coating that locks in all that garlicky, oniony, sesame-y goodness. That means every single nut gets the seasoned attention it deserves.
This recipe is easy enough for a weeknight snack but impressive enough to serve at your next holiday gathering. In about 30 minutes you’ll have an incredibly delicious snack that’s much more economical than buying pre-seasoned cashews and way less time-consuming than standing at the stovetop stirring nuts for ages.
why this everything bagel cashews recipe works:
🧥 well-coated. Unlike store-bought versions where all the seasoning ends up at the bottom of the bag, the whipped egg white method keeps every cashew perfectly coated.
🙌 low effort. You don’t need to stir the pan—just rotate it halfway through baking. No burned arms from reaching into the oven, and the coating stays put.
🧂 custom seasoning. You get to control how much seasoning you add and if you sprinkle on any extras!

💡tips & tricks for getting it right
🍽️ how to serve your everything bagel cashews
- served warm or room temp – these cashews are wonderful when served warm fresh out of the oven. Just let them cool for about 5 to 10 minutes before placing in a shallow serving bowl.
- top it off – I also love to give them a rough chop and use them to top salads or green bowls for an extra pop of flavor.
- DIY foodie gift – this is the perfect recipe to make for holiday parties and also holiday gifting if you want to give something that’s easy, homemade, and different from typical sweet treats.
ℹ️ troubleshooting tips
- keep a close eye during the last 10 minutes. The cashews can go from perfectly roasted to burnt and bitter in a matter of minutes. I like to check them at 20, 25, and 30 minutes.
- don’t stir the cashews during baking. When I tried to stir them, they were stuck to the parchment paper and it caused the coating to come off, undoing all that work with the whipped egg white. So if you ask me, it’s another win and a tick in the box for making this a low effort recipe.
- if you’re checking often, they may need extra time. Sometimes if I’ve been opening the oven too often to check them (#impatient), they need up to 40 minutes of roasting time to get deeply golden brown.

♻️ customize your roasted cashews
- spice it up – I always add extra garlic because I’m a self-proclaimed garlic girl. 💅🏻 You can also add a pinch of paprika or cayenne pepper, too!
- go nutty – use a blend of mixed nuts like almonds, walnuts, and peanuts in addition to the cashews for a super fancy snack mix!
🧰 equipment needed & storage tips
🫙 how to store your finished cashews
Allow the cashews to cool completely before attempting to store. If you put them in a storage container when they’re still warm, they’ll create some moisture from the heat emitting off the cashews and that could lead you to have soggy cashews. It will also lead them to spoil quicker.
But I find that I like them just as much when they’ve been allowed to cool completely for snacking on during the week.
💬 q+a
What type of cashews should I use?
Raw, unsalted, un-roasted cashews are best to use, since we are going to be seasoning and roasting them!
How can I get evenly roasted cashews?
Make sure to rotate the pan in the oven for even roasting.

ℹ️ troubleshooting tips
👀 Watch closely in the final stretch – cashews can shift from golden perfection to burnt in minutes, so peek at them around 20, 25, and 30 minutes. 🙅♀️ Resist the urge to stir – when I tried, the coating stuck to the parchment and came right off. Leaving them alone is actually easier and keeps that whipped egg white magic intact. ⏰ Opening the oven a lot? Add time – if you’re checking frequently (#impatient), they might need up to 40 minutes to reach that deep golden-brown color.♻️ customize your roasted cashews
