These easy everything bagel cashews are a delicious dupe of both Aldi and Trader Joe’s everything bagel cashews, except you get to customize the flavor and the seasoning actually sticks to each cashew!

Because here’s the thing: most store-bought everything bagel cashews have a major flaw: the seasoning falls right off. You end up with a pile of sad, bare cashews at the bottom of the bag and all that delicious bagel seasoning cramming the crevices of the bag instead of coating your cashews. In about 30 minutes you’ll have an incredibly delicious snack that’s much more economical than buying pre-seasoned cashews and way less time-consuming than standing at the stovetop stirring nuts for ages.

  • raw unsalted cashews – make sure to use raw, un-roasted cashews since we’re doing all that in the oven. Don’t worry if you can’t find whole fancy grade cashews—it’s way more economical to use cashew halves and pieces, and those are easier for snacking or sprinkling on salads anyway.

  • don’t stir the cashews during baking. When I tried to stir them, they were stuck to the parchment paper and it caused the coating to come off, undoing all that work with the whipped egg white. So if you ask me, it’s another win and a tick in the box for making this a low effort recipe.
  • if you’re checking often, they may need extra time. Sometimes if I’ve been opening the oven too often to check them (#impatient), they need up to 40 minutes of roasting time to get deeply golden brown.

But I find that I like them just as much when they’ve been allowed to cool completely for snacking on during the week.

  • 40 g egg white from 1 large egg
  • 5 g brown sugar packed, 1 tsp
  • 28 g everything bagel seasoning 3 TBSP
  • 455 g cashews 3 cups, or one 1-pound bag

Instructions
 

  • Preheat oven. Preheat oven to 300ºF.
  • Whisk egg. In a large mixing bowl, whisk the egg whites quickly, until they are lightly frothy.
  • Add sugar + whisk. Add in the sugar and whisk again until well incorporated. The mix will be very frothy and light in color.
  • Toss cashews. Add the cashews to the egg white and sugar mixture, and toss to combine.
  • Add seasoning. Sprinkle in 1/3 of the spice mix, and give the cashews a stir before adding in another 1/3 of the spice mixture.
  • Spread on pan. Spread the cashews on a baking sheet lined with parchment paper and sprinkle on the last 1/3 of the spice mixture.
  • Bake + stir. Bake for 15 minutes, then give the nuts a stir to help them roast evenly.
  • Return to oven. Continue baking for another 15 minutes, or until the cashews are golden brown and roasted.
  • Cool. Allow the cashews to cool on the baking sheet.
  • Serve + store. Serve while still slightly warm or allow them to cool completely before storing.
