A hand from out of frame is grabbing a classic Aperol spritz cocktail.

As someone with Italian heritage, I take great pride in sharing recipes that celebrate Italy’s finest flavors. This refreshingly bitter-sweet drink pairs well alongside traditional Italian dishes like mozzarella marinated with herbs or more modern appetizers like a pizza-inspired baked burrata dip. It even works wonderfully with light snacks like parmesan popcorn!

why this Classic Spritz recipe works:

⚖️ perfect balance. Some recipes out there have too much Aperol, or too little prosecco. This recipe balances dry prosecco with the bittersweet bite of Aperol.

🏛️ classic cocktail. This is the original recipe for the famous spritz at the right ratio, making it a timeless drink that pairs perfectly with any season.

🙌🏻 easy method. As easy as 3-2-1, this refreshing cocktail can be made right in the glass, requiring no special equipment!

🛒 ingredients

A labeled ingredient shot of the ingredients used to make a classic Italian Aperol spritz recipe.
  • Aperol – the classic Italian aperitif from Northern Italy is a bitter orange liqueur available at most liquor stores. It’s got a bright orange color and a lower alcohol content than other liquors, because it’s technically a liqueur by definition. While it is bitter, it’s much sweeter than Campari or other amaro liqueurs, and there really is no substitute for it!
  • Prosecco – this Italian wine is Italy’s answer to French champagne! I recommend making sure you choose a good quality bottle from a brand that is explicitly imported from Italy for the most iconic spritz. I love La Marca prosecco for all my spritzes!
  • sparkling water or soda water – while you can use either, I like to use sparkling water instead of club soda. You can even use a flavored soda if you want to get super seasonal! Make sure to use sparkling water, seltzer, or soda water, not mineral water, which can add additional flavors to the drink.
  • oranges – fresh orange slices are the perfect garnish for this spritz. You can either use a sliced orange wheel, an orange wedge, or even get creative and twirl some orange peel for a curly garnish!
  • ice cubes – unless you’re new here, you know about the importance of choosing the right ice for any cocktail. Opt to use larger cubes that keep the drink cold while slowing the dilution of the drink. I also love to get festive and use specialty ice, like blood orange ice cubes or grapefruit ice cubes for an even bigger wow factor!

💡tips & tricks for getting it right

🍽️ serving tips

The vibrant orange color is synonymous with summer, but it honestly works any time of year, whether you’re looking for an Italian cocktail to serve during winter holiday celebrations or springtime soirées!

  • cocktail hour – serve your spritzes as a pre-dinner drink with other Italian dishes like crostini and marinated mozzarella or a more traditional charcuterie board. Want something lower key? Pair it with plain ole salty snacks like potato chips for the perfect nosh!
  • during brunchspritz cocktails are the best brunch beverages because they typically have a low alcohol content compared to other drinks. This makes them a great option for daytime meals like brunch and pool parties!
  • just desserts – even though traditionally served during an Italian aperitivo hour, this is a great cocktail to serve with certain sweet foods like berry lemon bars that can stand up to the bittersweet taste of the drink.

ℹ️ troubleshooting tips

  • right ratio – while it can be tempting to free-pour ingredients, it’s imperative to get the right balance of 3 parts prosecco to 2 parts Aperol to one part soda water. This “3-2-1 formula” will result in the perfect Aperol spritz every time!
  • too bitter – if you aren’t quite a fan of the bitter flavor of Aperol, you can add in a half ounce to an ounce of simple syrup to sweeten the drink up even more. You can also add in a few drops of a saline solution for drinks, as the salt cuts bitterness.

🧰 equipment needed

  • wine glass – a large wine glass is the perfect drinking vessel for this cocktail. I like to use a balloon glass or a large red wine glass.
  • measuring beaker or jigger – the only truly critical piece of equipment aside from a glass is a measuring tool, such as a jigger or measuring beakers. These help you make sure you’ve got the precise proportions of each ingredient for the best ratio in your drinks.
  • cocktail stirring spoon – while not strictly necessary, a cocktail mixing spoon can help stir all the ingredients together well.
