It’s not officially springtime until you see peeps and plastic Easter grass pop up in the stores, and this Peeps simple syrup recipe is a fun way to incorporate the classic marshmallow candy into any beverage you can imagine! It’s made using Peeps candy, sugar, and water, and trust me— you need all three!

It’s no secret that I have a soft spot for polarizing candies. See: candy corn. 😌 With over a decade of experience turning anything and everything into a drink, I love a challenge, and when it comes to beverages, especially ice cold drinks, there is no more challenging subject to work with than marshmallows. Except maybe butter. But I digress… The magic of this syrup is that it adds vivid fun peeps color and flavor to all your drinks while staying a liquid sweetener, even when it’s cold!

This syrup is the perfect way to make peeps-inspired cocktails like a peep martini, or a peeps daiquiri, and even mocktails like a peeps soda pop that’s fun for the whole family! Serve your peep drinks with a platter of rice krispie treats shaped like easter eggs and you’re set up for a super fun holiday celebration!

  • Peeps marshmallow candies – these candies give the syrup its signature color and flavor. While it may be tempting to use more Peeps for more marshmallow taste, resist the urge, trust me. Too much marshmallow will leave you with a syrup that is solid when chilled.
  • granulated cane sugar – a bit of sugar helps to raise the sugar content of the syrup, which keeps the syrup liquid when refrigerated. There’s a bit of science behind it, but basically, when there is more sugar than water in the syrup, it won’t solidify when cold. Plain granulated sugar works perfectly in simple syrup recipes because it has the cleanest, purest flavor profile.
  • filtered water – plain filtered tap water works best for this recipe because it has already been rid of impurities that could affect the flavor of the finished syrup.

1: Heat water over medium low heat.

3: Add peeps and allow them to slowly melt. Do not turn the heat up, you don’t want the mix to simmer, so keep it at a medium-low heat.

🍽️ ideas for using your peeps simple syrup

cocktails

  • peeptini – while it’s already a bit sweet, this easy peep martini can benefit from a pour of this syrup! You can also use this syrup in place of peeps vodka to add color and flavor to your cocktail!
  • peeps daiquiri – use this syrup instead of classic demerara cocktail syrup when making a shaken daiquiri for a fun and festive twist!

mocktails

  • peeps soda – fun sodas are kiiiinda my thing, and this one does not disappoint. A peeps soda pop is perfect to serve at any holiday event where Peeps candies are around!
  • peeps milkshake – add in a few ounces of syrup into a vanilla milkshake for a light marshmallow taste and fun neon color!

ℹ️ troubleshooting tips

  • jelly syrup – if your syrup turned into jelly in the fridge, you can allow it to come to room temperature to liquify again, or pop it in a measuring glass filled with hot water to rapidly come to temperature.
  • not enough marshmallow flavor – if you want MORE marshmallow taste without adding in more peeps, you can use a special extract to boost the flavor. LorAnn makes a marshmallow extract that’s available online!

🔆 top tip

Marshmallows are tricky because they contain gelatin, which, well…gels up when it’s cold. So, you need to make sure your proportions of sugar to gelatin are just right in order to stay a liquid, even when chilled.

  • seasonal peeps – Easter isn’t the only holiday with these famous squishy candies anymore! Peeps show up around Halloween and Christmas, too! Use whatever shape you like for this syrup, but I do recommend sticking to one color of candy so your syrup is vibrant in color.
  • marshmallows – you can even use regular marshmallows to make this syrup in place of peeps, and yes, you can toast them, too!

🧰 equipment needed & storage tips

  • small saucepan – you’ll need a small to medium-sized saucepan to make this syrup. I like using a 1.5-quart saucepan because it’s the perfect size for a single batch!
  • fine mesh sieve – some parts of peeps don’t dissolve. Don’t think about it. Just filter them out using a mesh sieve!
  • airtight storage bottle – while my photos always showcase syrups in a pretty glass bottle, I actually prefer using these OXO squeeze bottles for homemade syrups (affiliate link). They are perfect for portioning, and you can even pop them in the freezer!

🫙 how to store Peeps syrup

This syrup stores well for up to 2 weeks in the fridge. You can also freeze it for longer term storage. Be sure to keep an eye out for signs of spoilage, like any mold specs or funky smells.

💬 q+a

Why can’t I just melt Peeps in water to make syrup?

You can! But the problem is that when you pop it in the fridge, it will turn into a glorified Jell-o. In order to keep the syrup a liquid consistency at any temperature, we’ve got to cut the syrup with some sugar. Raising the sugar content stops the gelatin from solidifying the syrup.
