🛒 ingredients

A top view of ingredients on a blue-marble surface: a bowl of grape tomatoes, a bowl of olive oil, a bowl of kosher salt, ground pepper, Boursin cheese, garlic cloves, and a shallot on a cutting board. Labels identify each item.
  • Boursin cheese – smooth and creamy Boursin cheese is also called Gournay cheese. It’s soft and spreadable, similar to whipped cream cheese. It comes in several flavors, but I like the garlic + fine herbs best in this recipe.
  • tomatoes – cherry or grape tomatoes are quick roasted to perfection to create the deep flavorful base for this dip.
  • shallot – shallot is like the lovechild of garlic and onion, it’s a bit more delicate than yellow or red onion, which is sharper in taste. This roasts with the tomatoes to create a wonderfully aromatic base.
  • garlic – fresh chopped garlic roasts with the tomatoes and shallot, and it helps to boost the flavor of the Boursin cheese while also giving this dip a fresh homemade flavor.
  • olive oil – a quick drizzle of olive oil helps to speed up the roasting process. Don’t reach for your finest oil here, as it’s going to be baked.

💡tips & tricks for getting it right

🍽️ how to serve your boursin dip

  • bread spread – pair with quick crostini crackers or a crusty fresh baked baguette for the ultimate starter!
  • chip dip – serve alongside tortilla chips, potato chips, corn chips, or pita chips for a game-day appetizer!
  • veggie slices – chop up some carrot sticks, celery, and red peppers for a quick crudités platter!
  • pasta sauce – this dip also makes an excellent pasta sauce! Boil your favorite pasta shape (I recommend cavatappi or rotini) and toss the al-dente drained noodles in this dip for a luxurious sauce!
  • on pizzas – this dip also works wonderfully as a pizza sauce on homemade crust! Use it on mini pizzas for a fun appetizer with incredible cheesy flavor!

ℹ️ troubleshooting tips

  • too watery – if your tomatoes release too much moisture and make your dip a bit “soupy” you can bake it for another 10-15 minutes to allow some of the excess moisture to cook off. You can also allow the dip to cool slightly before serving, which will help it firm up a bit.
  • tomatoes not bursting – make sure to slice your tomatoes into quarters, even though they are small in size. This helps them cook faster. If they aren’t breaking down and bursting, you can smash them with a spatula or fork to help the process along.
  • cheese not melting – if your Boursin isn’t melting after 8-10 minutes, you can allow it to bake for up to 15 minutes. Additionally, be sure to let your cheese come to room temperature as you prep the other ingredients so it bakes faster.
  • dip separating – if your dip begins to separate, just give it a gentle stir before serving.

♻️ customize your baked cheese dip

  • cream cheese + herbs – swap Boursin cheese for cream cheese whipped with herbs!
  • onions – you can swap shallot for onion if you prefer a caramelized onion style dip!
  • add protein – stir in cooked crumbled Italian sausage or crispy bacon or prosciutto for a heartier dip.
  • make it spicy – add red pepper flakes or a diced jalapeño to the tomato mix before roasting for a burst of spicy flavor!

🧰 equipment needed & storage tips

  • oven-safe baking dish – you’ll need a small to medium dish that can go from oven to table. I love using a cute ceramic dish for this because it doubles as a serving vessel and keeps the dip warm while everyone’s munching away.
  • mixing spoon or spatula – perfect for tossing those tomatoes with the olive oil and seasonings.
  • knife + cutting board – for slicing your tomatoes, shallot, and chopping the garlic. Fresh ingredients = fresh flavor, and that’s what makes this dip next level delicious!

🫙 how to store leftover Boursin cheese dip

If you end up having leftovers, store it in the fridge for up to 3-4 days. The tomatoes and cheese will keep their flavor, though the texture might thicken up a bit as it cools.

Reheating tips: To bring this dip back to life, pop it in the microwave at 30-second intervals for 1-2 minutes. You can also heat it back up in a 350°F oven for about 10-15 minutes until it’s warm and bubbly again.

Pro tip: If you know you’ll have leftovers, you can toss them with hot pasta the next day for an easy lunch. Just reheat the dip, cook up some rotini or rigatoni, and stir everything together. Instant pasta night!

💬 q+a

Can I prep this ahead of time?

Yes! You can slice the tomatoes, shallot, and garlic and stash your baking dish in the fridge in advance. Allow it to come to room temperature before baking so it roasts quicker.

Can I use another flavor of Boursin cheese?

Sure you can! The shallot flavored one or basil flavored Boursin would also be great in this dip!

What can I serve with this dip?

Serve your finished dip with crostini crackers, pita chips, tortilla chips, or thick slices of crusty baguette bread! You can also serve it with sliced veggies like celery, carrots, and red pepper for an elevated crudité style spread!
